“Attimi
Where a Moment Becomes a Meal (by Samantha Parish)
The Plate as Proof
A whisper of cardamom rounds out the prosciutto butter sauce in Attimi’s coral ocean trout. The fish, dry-cured until its flesh turns rich and almost lobster-like, is anchored by crisp skin for contrast. Finished with a warming tomato–chilli oil — warm, sweet, and sour, humming quietly without ever tipping into heat — the dish is both restrained and extravagant.
This, you think, is the sign of a chef who has found his pace and groove: a plate that proves the ambition of Attimi, where culinary alchemy turns simple parts into something extraordinary.... “
